Cook a chicken; eat some; make bone broth; have leftovers; grind up the rest for chicken salad … for the win!!
I absolutely love my new meat grinder attachment for my KitchenAid stand mixer.
Somewhere in my cupboards is a vintage manual grinder but by the time I dig that out and set it up, well, the electric version is so much more convenient. It is nice to have a backup.
Grinding the Meat
It is so easy. Simply:
chop the meat into small-ish pieces (to fit in the chute)
Turn the machine on, at setting 3
Put meat into the chute
Catch the ground meat in a bowl
When done, turn off the machine, take apart the attachment to wash it … and then, I like to make a chicken salad
Chicken Salad
I wanted to mix mayonnaise into the meat, the first time I ground up some chicken, but I didn’t have any so I used a bottle of LiteHouse coleslaw dressing instead and it was SO delicious!
I finely chopped an onion and mixed that and the dressing into the meat and it was done.
All I needed was some lettuce but I’m only on Day 11 with my hydroponic system. I still have a couple weeks to go, but when I have lettuce ready, I’ll be cooking up another chicken and repeating this process.
In the meantime, I cut a slice of my homemade bread and added the salad. I think that if I had toasted the bread, it would have been even better!
ONE CHICKEN: Sunday dinner; bone broth; leftovers; chicken salad. So much goodness out of one chicken.
