Cooking & Preserving #17: Quick and easy, healthy breakfast

Good morning to you,
Good morning to you,
We are all in our places,
With bright happy faces,
And that’s the best way
To start a good day

That’s the song I used to sing to my children when they were young.

Singing it this morning put a smile on my face

… as did the PUMPKIN SPICE PROTEIN PANCAKES made with my sourdough discard.

Today is bread day again and I made sure to build up my sourdough starter so that I had enough sourdough discard to make my pancakes.

The Recipe

  • 1 /2 sourdough discard
  • 1 egg
  • 2 scoops protein powder
  • 1/2 tsp baking powder
  • 1/4 c milk
  • Flour to make batter consistency
  • A splash of oil (for the frypan)

  • Mix it all together.
  • Heat kuraidori induction cooktop to 390
  • Add a splash of oil for that first pancake
  • Make your pancakes as usual (flipping when you see those bubbles).
  • You can serve them with maple syrup, but with the pumpkin spice flavouring of the protein powder, you definitely do not need it!
  • Some fruit on the side would be perfect

This is how I love to start my day: cooking from scratch, cooking healthy from scratch

How do you start your day?
