Cooking & Preserving #5: Sourdough biscuits - what’s next?

Well, I’d say that I have finally made this biscuit recipe work for me and this last batch was so good that I’m now thinking about how I can adapt it. 

The Basic Recipe

  • 1 c flour
  • 2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp salt
  • 1/3 c lard 

Mix together til there are no lumps of lard 
  • 1 c sourdough discard 

Mix together gently and pat down into floured board til a good inch thick. 
Cut out 6 biscuits
Bake at 425f for 20 minutes 
I love my air fryer/ toaster oven for this as it is such a small batch  

So, now what?

Well, let me tell you!!

As you know, I freeze-dry a lot of my garden harvest and I love turning things into a powder, especially things like kale, that we really don’t like to eat but know that it is full of goodness. 

So.. for my next batch of biscuits, I will be adding some powdered-something to the flour. It might be the kale; it might be tomatoes; it might be sweet corn… I won’t know until I start getting my ingredients together.
