Homestead Recipes #6: Lunch from Leftovers

Lunch, today, had to be a simple one. 
There is a muscle in my back that has decided to show me that something is out of sync and has been spasming BADLY. Actually, during the making of lunch, the one muscle “shout” moved across my entire lower back. “Sit down”, it said … I hear you, but, first, I have to finish lunch. 

During the making of lunch, I, of course, dropped a ton of onions and potatoes on the floor ….I will have to find them tomorrow. I’ll push through the pain to make lunch but not to do cleanup! That’s my excuse and I’m sticking to it. 

Lunch Plans

Lunch: I was going to make a stew but decided to just clean out the fridge, instead, and use up some leftovers … which, by the way, was not as much as I thought I had! 
It turns out that it was only some ham .. and the bacon grease from yesterday. 

Lunch Ingredients 

  • Onions
  • Garlic
  • Potatoes
  • Ham
  • Salt, pepper, paprika
  • Apple

Onions: Although I have some onions from my garden, they are rather small - and are not handy - and I just got a bunch of onions in my Produce Express grocery order, and they are in the kitchen, still, so I used one of those. 

Garlic: two cloves are not enough but I thought I had more in my hand and my back was still protesting from the first trip to the fridge. So …two, it is

Potatoes: I rarely peel my potatoes. You can call me lazy or say that there are lots of nutrients in the skin. Either way, the 5 potatoes didn’t get peeled.

Ham: we have already had two meals from the little ham, plus snacks, and it was time to either put the rest into the freeze-dryer and preserve it for later or eat it up. Thus, lunch. There was about a cup or so of meat, cut into chunks.

Paprika: this paprika is from peppers that I grew in my garden this year. I didn’t roast the peppers before freeze-drying them and grinding them to a powder. Maybe next year. I used about a tablespoon for this meal.

Apple: applesauce and ham is a good combination, so I took one of my apples that are going soft and I chopped that up for a little sweetness. (A great addition, I might add.) 

Then, I added some salt and pepper, popped on my handy-dandy wooden wok lid and let it cook/steam for 6 minutes. 

Results: 

Very yummy, even if I did put too much bacon grease in the pan, for sautéing the onions. 

Side dish

If I had felt up to it, I would have made some biscuits to go along with it. Next time.
