Sourdough Journey #4: Finding the right Biscuit Recipe

I’m getting closer!! 

My goal is to find a recipe that used the sourdough discard and that works for just the two of us.. and that we like, of course.

My first attempt, however small that it was, passed the Rick test, so I tried again today. 

I tried three different times. 

First one was simply “flat”.
Second one was much better. 

But the third one, making just 6 biscuits, which is perfect for us, was done in the air fryer, which had produced fluffier biscuits yesterday (even though I’m not sure that that was the factor that had had the effect.) 
 
I adapted the original recipe just slightly. 

  • 1 c flour (plain white is what I have)
  • 2 tsp baking powder
  • 2/3 tsp salt
  • 1/2 c lard
Mix together with pastry blender 
Add in
  • 1 c sourdough discard 

Gently fold together, flatten, and cut out biscuits.
Air fry at 425F for 30 minutes 

Tasty results!

On a side note: 
The bowl either belonged to my grandmother or my great-aunt (sadly I forget)
The pastry blender is also a family heirloom.
And the beautiful wooden spoon was my mother’s (but I scooped it up when she was downsizing.) 

I’m sure that these items helped with the success of the biscuits.
