Garlic Scape Pesto
Yesterday I harvested some garlic scapes and today I used them to make some pesto

I based this on a recipe I found online using garlic scapes and Swiss chard. 

This is my variation: 
  • 1/4 c walnuts 
  • 6 garlic scapes 
  • 3 cups (?) of greens (kale, Swiss chard, spinach, parsley)
  • 1/4 c olive oil
  • 2 c mozzarella cheese 
  • 1 freezedried lemon, crumbled
  • 1 tsp salt 
  • 1 tbsp lime juice 
I put it all into a food processor, one item at a time, and ground it all up into pesto. 

It is VERY garlicky. Should probably add some more cheese and oil but, for now, it is a great dip for crackers and I love garlic so I’m happy … Rick? Probably not so much.
