Today, I was on a mission to use up some of the older products in my pantry. (
Today’s blog). On the list to use up:
- Package of Einkorn pasta
- Jar of freeze-dried veggies
The recipe
- Cook the pasta according to package
- In last two minutes, add freeze-dried vegetables
- Drain and cool
- Make dressing (see below)
- Mix it all together
- Put in refrigerator
DRESSING INGREDIENTS:
- 1/2 cup mayonnaise
- 2 teaspoons vinegar
- 2 teaspoon salt
- 2 teaspoon black pepper
- 1/2 teaspoon sugar
Chicken
I had recently pressure canned some chicken, trying out my new electric pressure canner. This was my first time doing the raw-pack method and I wanted to see how it turned out. (Delicious, by the way.)
I added the entire pint jar of chicken to the salad, pulling apart the larger chunks of meat. There was very little broth, so I added that into the salad as well.
Notes:
- I wanted to use up the pasta, so I used the entire package.
- The veggies were the first of my freeze-drying efforts and were a frozen, store-bought mix
- I used more mayo than above because I emptied the container
- I also added some honey to thicken it .. I might have added too much vinegar, trying to compensate for the extra mayo.
- I had leftover dressing and will add it to the salad as the noodles absorb the dressing that was first added.
Now, we have a LOT of salad to eat!
