Chicken - Pasta Salad
Today, I was on a mission to use up some of the older products in my pantry. (Today’s blog).

On the list to use up:
  • Package of Einkorn pasta
  • Jar of freeze-dried veggies 

The recipe

  • Cook the pasta according to package
  • In last two minutes, add freeze-dried vegetables 
  • Drain and cool 
  • Make dressing (see below)
  • Mix it all together 
  • Put in refrigerator 

DRESSING INGREDIENTS:

  • 1/2 cup mayonnaise
  • 2 teaspoons vinegar
  • 2 teaspoon salt 
  • 2 teaspoon black pepper
  • 1/2 teaspoon sugar

Chicken

I had recently pressure canned some chicken, trying out my new electric pressure canner. This was my first time doing the raw-pack method and I wanted to see how it turned out. (Delicious, by the way.)
I added the entire pint jar of chicken to the salad, pulling apart the larger chunks of meat. There was very little broth, so I added that into the salad as well. 

Notes: 
  • I wanted to use up the pasta, so I used the entire package.
  • The veggies were the first of my freeze-drying efforts and were a frozen, store-bought mix
  • I used more mayo than above because I emptied the container 
  • I also added some honey to thicken it .. I might have added too much vinegar, trying to compensate for the extra mayo. 
  • I had leftover dressing and will add it to the salad as the noodles absorb the dressing that was first added. 

Now, we have a LOT of salad to eat!
