Rick wanted cookies …
… so, I made him cookies.
It was late-ish (for me) and my hand was aching. Somehow, I think I’ve pinched a nerve in my wrist and it hurts … still.
But, Rick’s sweet tooth was aching, too, so I found a simple sugar cookie recipe and adapted it to make it quicker and easier for me.
The recipe
Mix:
• 3/4 cups butter
• 1 1/2 c sugar
• 2 eggs
• 1 tsp vanilla
• l tsp maple extract
Mix in
• 3 c flour
• 2 tsp baking powder
• 1 tsp baking soda
• 1/2 tsp salt
Shape into balls with small cookie scoop
Space them out on two cookie sheets lined with parchment paper.
I baked one tray and put the second into the freezer for another sweet-tooth-emergency. (Once frozen, I put them in a freezer bag.)
Bake at 360F for 9-12 min.
(With my oven, it was 12 minutes).
