Krumpli Paprikas (cooking with staples)
Yesterday, I didn’t feel like making a big meal, so I turned to one of the good old standbys- paprika potatoes 

Krumpli Paprikas 

This is a Hungarian Recipe that I learned many years ago from my (then) mother-in-law.

You start with your onions: 
  • Sauté onions and garlic in lard or bacon grease or oil … 
  • Add some kielbasa or sausage or leftover meat, if you’d like 
  • Add chunks of potato (“krumpli”)
  • Just barely cover with water 
  • Stir in seasonings: salt, pepper, garlic 
  • And 3 tbsp of paprika (I used my freeze-dried, home-grown paprika peppers)
  • Bring to a boil and then slow cook until the water is almost gone and you have a thick sauce on the potatoes 
  • I could have sprinkled in some freeze-dried kale to enhance the nutrition
  • Serve it up
  • Of course, you can add a dollop of sour cream on top.
