Yesterday, I didn’t feel like making a big meal, so I turned to one of the good old standbys- paprika potatoes
Krumpli Paprikas
This is a Hungarian Recipe that I learned many years ago from my (then) mother-in-law.
You start with your onions:
- Sauté onions and garlic in lard or bacon grease or oil …
- Add some kielbasa or sausage or leftover meat, if you’d like
- Add chunks of potato (“krumpli”)
- Just barely cover with water
- Stir in seasonings: salt, pepper, garlic
- And 3 tbsp of paprika (I used my freeze-dried, home-grown paprika peppers)
- Bring to a boil and then slow cook until the water is almost gone and you have a thick sauce on the potatoes
- I could have sprinkled in some freeze-dried kale to enhance the nutrition
- Serve it up
- Of course, you can add a dollop of sour cream on top.
