Made a batch of monkey butter for my crew. So incredibly yummy served over homemade waffles or ice cream.
Recipe
- 5 ripe bananas(cut off any brown spots)
- 1 can of crushed pineapple (20 oz)
- 1/2 cup of shredded coconut
- 3 Tablespoons of Lemon Juice
- 3 cups of sugar(white or brown)
- 1 tsp of vanilla
- 1 box of pectin
Combine all ingredients except the bananas in a saucepan.
Bring to a boil, stirring often then add in the bananas (sliced)
Use a potato masher to mash bananas down to your desired texture.
Return to a boil stirring constantly.
Reduce heat and let simmer until your mixture reaches the desired consistency.
Makes approx 5 half pint jars.
Store in refrigerator or process in a pressure canner for longer storage.
